Meanwhile heat the oven to 180C. Line a large shallow baking tray or roasting dish with baking paper. Season lamb chops well with salt and freshly ground black pepper and lightly coat in flour.
Preheat the oven to 180C/350F/Gas 4. Heat the olive oil in a pan and fry the lamb pieces and kidneys for 1-2 minutes on both sides, or until golden-brown all over. Remove from the pan and set aside.
